POLISH SAUERKRAUT SOUP – KAPUSNIAK


POLISH SAUERKRAUT SOUP – KAPUSNIAK

INGREDIENTS

  • 14 oz (400g) sauerkraut
  • 12 oz (350g) smoked Polish sausage, split lengthwise and cut into ½-inch pieces
  • 2 medium onions, finely chopped
  • 2 medium carrots, diced
  • 4 medium potatoes, cubed
  • 5 oz (150g) smoked bacon, chopped
  • 1 teaspoon caraway seeds
  • 1 sprig thyme
  • 2 tablespoons tomato paste
  • 3 tablespoons olive oil
  • 2 quarts (2 liters) water, or chicken or vegetable broth
  • 1 bay leaf
  • Salt
  • Pepper


INSTRUCTIONS
In a large soup pot, heat the olive oil, add onions and cook until they soften. Add carrots and cook for few more minutes. Add potatoes and water or broth. Bring to a boil.
Add the bacon and sausage to the frying pan and cook until starting to brown, about 5 minutes. Add the tomato paste and caraway seeds and cook for a few more minutes. Add sauerkraut and simmer for 5-10 minutes more.
When the potatoes are almost done, add the bacon, sausage and sauerkraut mixture into the soup pot. Add bay leaf, thyme and season with salt and pepper. Return to boil and simmer or another 20-30 minutes until the cabbage is soft. Enjoy!

POLISH SAUERKRAUT WITH MUSHROOMS

Polish Sauerkraut Ingredients:
  • 1 c. sliced fresh mushrooms
  • 1 lg. onion, diced
  • 1 (27 oz.) can sauerkraut
  • 2 tbsp. vegetable oil, bacon fat
  • 1 tsp. caraway seed
  • 1 c. water
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
Polish Sauerkraut Method:
1. Saute mushrooms and onion in 2 quart pot until onions are translucent.
2. Rinse sauerkraut 3 times in colander or pot. Let drain thoroughly.
3. Add sauerkraut to mushroom and onions, followed by water, caraway seed, salt and pepper.
4. Stir well and simmer for 20 minutes to 1/2 hour.
5. Serve without draining.

BROWNED SAUERKRAUT:

1. After 20 minutes remove from heat and drain...enjoy the Polish sauerkraut !

Polish Sauerkraut Ingredients:
  • 2 lb. smoked pork shanks
  • 1 qt. water
  • 1 onion, well browned
  • 1 qt. sauerkraut without the juice
  • 2 tsp. salt
  • 1/4 c. cream
  • 1 egg
  • 1 tbsp. flour
  • 3/4 c. skim milk
Polish Sauerkraut Instructions:
Cook meat in water until well done. Add onion, sauerkraut and salt. Beat egg. Add flour, milk and cream. Add to soup and bring to boiling point. Serve with potato dumplings. 4-6. Enjoy !

POLISH SAUERKRAUT WITH SPARE RIBS

Polish Sauerkraut Ingredients:
  • 2 lb. spare ribs
  • 1 qt. sauerkraut, rinsed and drained
  • 1/4 tsp. caraway seeds
  • 3 qt. cold water
  • 1 lg. onion
  • 1 tbsp. barley; optional
Polish Sauerkraut Instructions:
Cover spare ribs with cold water and bring to boiling point. Skim and add chopped onion, sauerkraut, seeds and barley. Simmer uncovered about 2 hours or until meat is tender. Salt and pepper to taste. Serve with rye bread or mashed or fried potatoes.

POLISH SAUSAGE CASSEROLE



POLISH SAUSAGE CASSEROLE
Polish Sauerkraut Ingredients:
  • 3 med. potatoes, cubed and cooked
  • 1 (16 oz.) can sauerkraut, drained
  • 1/2 lb. Polish sausage, in bite size pieces
  • 1/2 c. Thousand Island dressing
  • 2 tbsp. chopped parsley
  • 3/4 c. shredded Swiss cheese
  • 1/2 green pepper, cut into slivers
Polish Sauerkraut Instructions
Combine sauerkraut, potatoes, sausage, dressing and parsley. Pour into greased 10x6x2 inch oven-proof baking dish. Bake at 350 degrees for 25 to 30 minutes. Sprinkle cheese and green pepper slivers over top. Bake 5 minutes more. Approximately 5 servings...enjoy it !
